I've looked for good numbers earlier in the Peninsula Campaign than the Seven Days myself, often with pretty mixed results. I figured now would be a good time to post that info since you are looking for it anyway. Go to:

Scroll to the bottom and download the zip files. Regretfully, at the time I was compiling these unit strengths, I did not mark down the sources I used, but most were from campaign studies, regimentals, or found online.
EDIT: Looking through the material, it looks like I did source some of it. It's not complete by any means, but it's a good starting point for you.
